Buffalo Chicken Meatloaf

So a friend of mine sent me a recipe for this and I made it last night. It was pretty damn good. Check it out:

Olive Oil Spray

2/3 cup of quick oats

1/2 cup skim milk

2 1/2 tablespoons of hot sauce or wing sauce

1 pound of extra lean ground chicken breast

1/2 cup of finely chopped celery

1/4 cup of shredded carrot

1/4 cup of finely chopped sweet onion

2 large egg whites, lightly beaten

1/4 teaspoon of salt

2 ounces (about 1/2 cup) blue cheese.

Preheat oven to 350. Spray bread pan or similar size with olive oil spray.

Combine the oats and milk in medium bowl and stir to mix. Let stand for 3 minutes, or until the oats begin to soften. Stir in the wing sauce until well mixed. Add the chicken, celery, carrot, onion, egg whites and salt. With fork or hands mix the ingredients well. Add the blue cheese and gently mix to combine.

Transfer mixture to pan and spread so that the top is flat. Bake for 35-40 minutes, or until the chicken is completely cooked through. Cut into 8 slices and serve.

I did 3 1/2 Tbsp of hotsauce and 1/2 C. of red onions to give it more spice. I also added about 5-6 ground up Chili Piquin’s (they are tiny little hot peppers). It still wasn’t spicy enough for my taste, so I also added some more buffalo hot sauce on top of my slice. I used 2 whole eggs instead of just the whites. Who wants low fat and low cholesterol anyway? I also added some seasoned salt in lieu of regular, some garlic powder, sage and thyme.
